Wheat-free Mini Flatbread

These tiny flatbreads are wheat-free and make great appetizers, sandwiches and mini pizzas. It is so easy to make and tastes delicious!


  • 1 cup garbanzo bean (chickpea) flour
  • 2 tbs. golden flaxseed flour
  • 1/4 cup shredded mozzarella cheese – low moisture
  • 1 tbs. extra virgin olive oil
  • ½ tsp. sea salt
  • 1 tsp. baking powder
  • 1 cup room temperature water


  • Preheat the oven to 420°F (or 216°C).
  • Grease the pan well with olive oil or coconut oil spray. Set aside.
  • In a medium size mixing bowl, mix all ingredients and whisk until the batter is smooth and mixture thickens slightly.
  • Spoon batter into the pan, one tablespoon at a time. Don’t make too thin or too thick. (you can use two 12–cavity round whoopie pie pan if you have.)
  • Place in oven and bake for 25-30 minutes, until golden on the edges and firm throughout. If you think it needs more time or less time to cook adjust the time…ovens vary.
  • Turn off oven, open oven door, and let cool to room temperature.
  • Serve warm or at room temperature with any healthy filling you desire…Enjoy!
